With this new project, we are returning to the roots of the American IPA. While a slew of ‘modern West Coast’ interpretations have recently blurred the lines between these styles, this release sticks faithfully to the AIPA’s traditional identity: a profile that is notably paler, softer in its bitterness, and far more aromatic than the traditional West Coast heavyweights.
For the base we experimented with a new Simpsons pale malt along with a touch of light crystal for a crisp finish. On the hot side, Citra and Simcoe hops bring fresh pine notes and a strong grapefruit character. Dry hop additions of these same classic varietals contribute layers of mango, apricot and citrus peel complexity, all finished off with a very pleasant medium bitterness.
