A solid dose of light pilsner malt along with a variety of similarly undermodified German-style malts gave us a crisp, clean base to work with. Then we got it All Funked Up. Generous additions of Apollo and Vanguard hops created a substantial flavor of citrus peel and floral spice as well as plenty of IBUs for such a mild malt bill. Ale yeast was then used for primary fermentation before adding a blend of three strains of Brettanomyces. These superattenuating little bugs were allowed to thoroughly ferment out many complex sugars and leave behind their characteristic (and very apparent) wild and funky flavors. After about four and a half months, we added a fresh addition of whole leaf Amarillo hops that spent about a week imparting a citrusy, almost candylike flavor. Finally, we moved the beer to a bottle for a final fermentation that cleaned and carbonated this beer to be ready for the glass.

Pours a fairly light, glowy yellow-orange color. Quite cloudy. Small to medium white head. Somewhat frothy. Dissipates relatively quickly. The aroma has tons of fruity brett flavor alongside a big, tangy citrus hop note. Clean, mouth-watering funk. There’s a fairly light sourness to it. Particularly big on lemons with a little lime. Smells like mashed up lemons on a dusty farm. Grapes, apricots, peaches, pineapples, mangoes, honeysuckle. Very mild cheesiness and a bit of pale malt flavor, quite fresh. The taste is mildly sour, more tart than sour, really. Big on lemon. Lots of earthy, funky yeastiness. Finishes dry. Lots of really nice brett funk. Creamy, light feel. Full of flavor but not much booze or heat for 8% abv. Really, really good beer. I’m a big fan of the brett plus bright hop flavor profile, so this is right up my alley. I wish there were similar, easily accessible beers around. Unfortunately, they mostly seem to be limited or one-offs.

Holds up incredibly well despite the fact that I just had 3 fonteinen’s homage - an admirable feat. Pours cloudy golden with good head and lacing. Smells like slightly fermented orange juice with some sourness. Light bitterness with some orange peel. Nice tang, and good mix. Fizzy carbonation, some astringency from peel. Bottle brought in thanks to Travlr.

Bottle thanks to Rob. Pours a cloudy yellow orange with medium frothy white head that lasts. The aroma is strong funk and brett. Medium mouthfeel with nice citrus and brett with lingering light dry finish. Very impressive.

Bottle. Moderately strong Brett- horseblanket aroma with mild lemon and malt notes. Golden yellow with small head - light effervescence. Forward funky horseblanket/barnyard and light lemon barley malt flavor. Mildly bitter orange peel finish. Strongest Brett presence of this series yet.

Bottle at 7K/5K. Pours gold with white head. Nose/taste of funk, hoppy citrus, lemon, wild yeast and candied citrus. Medium bodied.

Bottle shared by jackl at the April 2014 Charlottesville tasting. Pours a hazy yellow with a thin frothy tan, decent. Aroma of brett, jammy stone fruits and berries. The taste is bretty funk, herbal, mustard note, dry stone fruits. Medium bodied, low carb, decent balance. Nice.

Brett sour, granny smith, oak, persimmon, a little hot. Cloudy amber, headless. Oak, persimmon, not quite as sour, but still quite good.
