A solid dose of light pilsner malt along with a variety of similarly undermodified German-style malts gave us a crisp, clean base to work with. Then we got it All Funked Up. Generous additions of Apollo and Vanguard hops created a substantial flavor of citrus peel and floral spice as well as plenty of IBUs for such a mild malt bill. Ale yeast was then used for primary fermentation before adding a blend of three strains of Brettanomyces. These superattenuating little bugs were allowed to thoroughly ferment out many complex sugars and leave behind their characteristic (and very apparent) wild and funky flavors. After about four and a half months, we added a fresh addition of whole leaf Amarillo hops that spent about a week imparting a citrusy, almost candylike flavor. Finally, we moved the beer to a bottle for a final fermentation that cleaned and carbonated this beer to be ready for the glass.

On tap at HopCat Lexington. Clear light Amber with big off-white head. Aroma is herbal hops, medium body, medium carbonation, and thick small-bubble lacing. Taste is herbal hops and tart funk. Does not meld for me.

Strong Brett character, but also too yeasty, too dirty; very astringent; bitter orange peel, and foot.
Messy and overly expensive beer.

Bottle - Lots of funky Brett notes. Cloudy gold with a small white head. Unusual tropical notes, bready sweetness and a long Brett finish.

Hazy, light tan. On the nose, lots of brett. Smells nice. Some bright citrusy hop as well. Quite appetizing. Bitter, bretty, has a lot of carbonation and that knocks out your palate a bit, certainly the sweetness. So not so much balance on the palate as on the aroma.

750mL bottle, pours a cloudy pale golden with a small white head. Aroma brings out plenty of brett funk, light citrus hops and biscuity malt. Flavour is loaded with brett funk, citrus hops, and biscuity malt. Very funky and brett, finishing rather abrasively hoppy and funky. Nice stuff.

Sampled as All Funked Up Brett the Hipman Small white rim over hazy yellow-orangey beer. Chamomille, other herbs, wild yeasts, floormop variety. Floormop Bretts, wet towel, empty vegetable taste and MF. Medium bodied. Not really the best of wild ales... 7/4/6/3/11

Bottle. Pours clear ruby. Aroma is candy, dried fruit, barrel, sugar, booze. Body is very heavy and sweet, strong dried dark fruit, plums, prunes, booze. Palate is long, sweet and fruity. Booze again. Very good! A great sipper for the cold days.

22oz bottle. Been holding on to this close to a year. I was concerned about the hop and brett mix, which I generally find aversive. Opened this up at a tasting after we did a blind tasting of Bretted Saisons. I can say that this beer would have done fine as a saison and I get no hop-centric character to this beer. Thick oily golden color, cannot see through it. Aroma is lightly oily and herbal-earthy brett, strong. Flavor has a lemon zing with some tartness. A little residual sweetness of the malts. Less herbal-earthy and a bit more goat oily. A bit of a dry bitter aftertaste. This might be the best price to quality ratio I have had from this brewer.

Nice creamy mediumlasting head. Aroma is slightly dry boozy, citrus peel, oak, thinner, brett, bark, citrus, paint. Taste is slightly harsh citrusy, brett, citrus peel, oak, thinner, alcohol, citrus, bark, old cat piss. Medium to longlasting bitterness, slightly dry harsh mouthfeel. Not my cup of tea...

Bottle at jackl’s, courtesy of jackl, thank you sir! Cloudy golden yellow color, white edge head. Aroma of sour tangerine, grapefruit, peach. Taste is smooth tangy grapefruit and pineapple, not over the top.
