Dry-hop 2024 is a blend of one, two, and three-year-old lambics, showcasing our interpretation of what dry hopping can bring to a mature lambic without overshadowing its character.

For this blend, we worked with overaged Nelson Sauvin hops sourced from Freestyle Hops in New Zealand. These hand-harvested whole cones were selected especially for us and carefully shipped halfway across the world before finding their way into our cellar. Rather than using them immediately, we allowed the hops to age for an additional year before dry-hopping the blend. A portion of these hops was used by Steven Strait away to brew the Friendship Saison of Wings, allowing us to explore the character of the Nelson Sauvin hops in a very different setting.

Nelson Sauvin is celebrated for its distinctive aromatic profile, often displaying notes reminiscent of white grapes, gooseberry, and tropical fruit. Through ageing, the assertive bitterness of the hops softens, allowing their more delicate aromatic qualities to integrate seamlessly with the complexity of the lambic.

While dry hopping is often associated with freshness and intensity, our aim was never to turn lambic into an IPA. Instead, we sought to enhance the beer's natural elegance and add another layer of expression, allowing the hop character to complement rather than dominate.

The result is a refined and highly aromatic lambic in which subtle vinous notes, gentle herbal nuances, and a touch of exotic fruit intertwine with the depth, acidity, and complexity that define our house style.
