"It has the colour of onion skin", said a voice behind me.
It was Raymond Coumans.
He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.
The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Bottle.
A- Dark red color, hazy liquid, no head.
A- Raspberry candy.
F- Raspberry, faintly sweet, slightly acidic, mild funk.
P- Light body, average texture, average carbonation, balanced finish.
O- Accidentally allowed this to briefly freeze, oops. I don't think it impacted the flavor much but you never know. This was a 2022 vintage with 3 years of age. Really nice. Raspberry is the star, I did expect a bit more brightness or funk to it but who know what would've come with some more age.

A small bottle, corked and capped, purchased from Beautiful Beers, for which many thanks, drunk at Dad’s place while home on holiday. Aroma: sour, cherry predominates. Appearance: clear Ribena, minimal lightest of light pink lacing. Palate: medium-bodied and rather tart on the tongue, though not eye-wateringly so; softish carbonation. Finish is long and lingering, fruity and extremely complex and well-balanced. Taste: lightly sweet with some sour and astringent notes. Raspberries take centre stage with a bit of lambic funk and a dry bite. This is great, craftsmanship of the highest order.

One year old bottle at Mon Petit Cafe. Pretty clear red pink, tart fruity, light barn, citric, berries. Sparkling medium light body, lovely dry fruity, high drinkability, fresh, clean, lovely nightcap.

Bottle at Mon Petit Cafe, after listening to Sam. Clear ruby. Black currant, strawberry, summer fruit, fresh. Taste is full, round, all the red fruits, soft and light with a wonderful refreshing tartness. This is not too sweet and not too sour. Not sticky at all. This is lovely.

It’s high-time I give this one a rerate, it’s crazy how long ago I last rated it. Shared a 750mL with my girlfriend and her uncle. Oddly enough, my previous rating, from so long ago, isn’t too bad for one of my first ratings . This is still my least favorite Cantillon (still love it) and in general I think raspberries go least well with lambics. Too much heavy, poignant acidity and dryness with less complexity than even cherries offer. Granted, this was way too young. At only 5 months old, the raspberries, while certainly flavorful, were just too forceful. You can taste the individual raspberry flavor and acids and it both stands apart from and masks the lambic character. Other than that, same delicious sulfury goodness, with a perfect mouthfeel/texture/body that you find in so few other breweries. I’d much rather trade off some fruit flavor to have this a little more homogenous and with more apparent lambic character from aging.

Rose, slightly orange pour with a stable white head. Aroma is malt, vinegar, rasberries. Taste is tart rasberry, cereal/mal, vinegar, some citrus, apple and a hint of cream. Very nice.
