Selves Collapse is a blend of mixed-culture wheat saison inspired by stories of 19th and 20th century Belgian and French farm beers.
This blend was constructed of barrels from three separate iterations of the same beer, made from local malted barley and organic wheat, hopped with a blend of new and old world whole cone flowers, and fermented with our culture of wild and appropriated yeasts.
This beer was refermented to condition in the bottle.

Conditioned with: Organic sugar.
Cellar: Will continue to improve with age for the next 12+ months, best before fall 2028.

Bottle, 750 ml, shared with Eric, MiroB, Luka, Brada, kajser27. Beautiful cloudy golden to orange colour with large white head. Nice fruity notes, stone fruit, some piney notes, fink, nice soft texture, gentle.
