What is a Rustic Ale?
Otherwise known as a Saison or a Farmhouse Ale, we have decided to call ours a Rustic Ale because it harkens back to an era when beers weren’t the product of a single lab grown yeast strain, but instead born of a complex mixed culture of yeast and bacteria. The result is a beer that has jammy stone fruit notes, fresh cut hay with our signature dry finish. Complex but drinkable!
What is Mixed Culture Fermentation?
Most of the beer we serve here is the work of a single strain of yeast. Single strains are predictable, and optimized for a quick and orderly fermentation.
For our Barrel House beers and our new release Kludde (Rustic Ale), we use a wide range of micro-organisms (yeast and bacteria). These work much slower but can create some really complex and delicious flavors. Kludde spent six months aging in stainless steel before we deemed it release worthy. These beers can become very sour, though the spectrum can vary from just a pleasant kiss of funk to bracing sourness. And in this beer we have a gentle tartness.
So welcoming Kludde to the lineup today! A 5.8% Rustic Ale named after a malicious Belgian spirit goblin that roams the Flemish Country side. Our Kludde at Attaboy is a bit less mischievous and more full of holiday spirit. And delishness.

Golden with a medium sized white head that left decent lacing. Aroma was Sprite soda. Flavor was tart, tangy and funky with Sprite and fruity hops. Long finish. Medium body.
