Before refrigerators and ice machines existed, the last batches of bottom-fermented beer could only be brewed in March (März) at the latest. It was then cooled with naturally forming ice. To harvest the ice, two processes were commonly implemented. Large blocks of ice were frequently cut from the ice sheets of ponds that were frozen over. They were then stored in the cellars of breweries. The second process is what gave Eiszäpfle (or icicle in English) its name. Large wooden scaffolding was sprayed with water so that icicles would form on the beams. These could then be knocked off and used to cool the beer.

Bottle. Yellow in colour with a decent, white, head. Bready malts, straw, a hint of stone fruit and suggestion of grassy hops, before a moderately bitter finish. A good lager.

Bottle shared in London - many thanks to Fergus. Pours perfectly clear gold with a foamy white head. Light toasty cereal in the nose, bread, hints of caramel. Medium to big sweet flavor, more cereal grains, caramel, bread, minimal bitterness. Light bodied with average carbonation. Sugary finish, hints of paper, faint caramel, simple bread, cereal. Good stuff. What more would you want out of a marzen?

Bottle thanks to clear pale gold with a medium white head. The nose is soft, grain, dull peach, paper, orange muffin, apricot, candy and honeysuckle. The taste is crisp, bitter, quite light, tangerine, sweet orange, bread, oily, sticky sweetness, grainy and some toasty grass with a short, toasty finish. Medium body and average carbonation. Simple, but not bad.
