Made in the true Champagne method with a blend of Ontario's finest Heritage apples. Matured in Niagara wine barrels and then aged in bottle on Champagne yeast for a further 12 months. Crisp acidity with notes of dried apricot, buttered toast and elderflower blossoms. Dry.
