For this small batch of Druif, we used Zweigelt pomace from our good friend Christoph Hoch from Hollenburg an der Donau, Austria. The maceration of this red grape pomace took over nine months on a wooden barrel. Lambikken originate from four different barrels and eleven original brews, of which the oldest was brewed in March 2018. The weighted average age of this grape lambik is more than 27 months. The fruit proportion is 293 grams of pomace per litre of Druif. About 90% of the lambikken have been brewed with local Pajottenland cereals.
A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Christoph Hoch is a Demeter-certified wine maker from Hollenburg an der Donau, Austria. He is not only crazy about our lambik, he also has some of it ageing in his own barrel cellar!
