This edition of Southward is comprised of imperial stout aged in Rum and Bourbon barrels for nearly two years. Following its integration, the blend was conditioned with a range of additions: organic Papua New Guinea vanilla beans; fresh cacao nibs sourced and processed by Mateo at Prophecy Chocolate in nearby Morrisville, Vt.; and certified organic roasted pecans, sourced by Tierra Farm.
Conceived by Ryan Witter-Merithew to mark his migration from Vermont to North Carolina in 2017, Southward was originally a nod to his time in Vermont and transition to warmer climes. Following 7 years away, Ryan returned north to Hill Farmstead in 2024, and the beer now represents a multi-layered chapter in his journey, both south and back again.

Bottle pour at Hill Farmstead, pours black with a small tan head. Nose has plenty of spirit barrels, bourbon, earthy roast, and booze. Flavour is likewise quite boozy and spirit-forward, lots of rum, some cocoa, and soft sugars. Low residual sugar, barrel-heavy, and balanced. Excellent.
