To craft it, the Crux Fermentation Project crew started with a rich base brewed with dark Belgian candi sugar. And they fermented it with Trappist yeast strain for subtle swirls of spice the style is so loved for.
Tasting Notes
Malty aromas perfume the air with every mahogany-hued pour. Decadent dried fruit tones carry on the full-bodies swig, with dried plum, cherry, and raisin mingling with pumpernickel notes. A kiss of spice and cola rise on the end for a delicious Dr. Pepper-like finish, further obscuring a genuinely surprising 11% ABV.

Dark brown/ruby body with small, tight beige head. Aroma is true Belgian, dried fruit, molasses and oak barrel. taste is slightly tangy, some alcohol burn. Mouthfeel is sticky and weight is medium bordering on heavy. Good try at this style. Very close to a dubbel.

On tap at Harry’s Hofbrau for SF Beer Week. Pours a clear chestnut with white head. Moderate complex dark fruit. Solid yeast contribution leads to medium full mouthfeel. Finishes quick. Not terribly complex but tasty.

On tap at Belmont Station's Bier Cafe, pours a mostly clear dark amber with a small beige head. Aroma brings out a mix of candied sugar, licorice, Belgian spices, and wine barrels - not sure it's all cohesive. Flavour brings out candied sugar upfront, along with raisins, followed by red wine barrels. Weird stuff. It's definitely not very cohesive, but at least there are no harsh elements. Decent, but haphazard.

Bottle from Belmont Station. Pours dark ruddy copper with slight, transient, tannish head. Aroma of medium dark stone fruit - rather plummy. Med + body. Mild carb. Flavor is very prune with some yeast/spice. For me it’s a dubble trying to be a quad. Extremely tasty with the pluminess. Finishes more dry than not, tho there’s a good bit of malt involved.

Draft at Churchkey for CBC. Poured a golden copper color, clear with a small white head. Aroma is plenty of sweet fruit notes, malts, and some sold citrus notes. Flavor was boozy fruit notes, citrus characters, malts. This was a touch hot for me - too much booze. Had it been a bit more balanced, the citrus notes along with the fruit would have been amazing.
