Daanius Aas, The Executive Chef of the Restaurant Hiis in Taju, Estonia, asked us to create a beer for them with "everything pine".
We created a dark saison flavored with pine cones, pine needles and pine bark.
The idea is to get citrusy notes from the cones, resinous notes from the needles and spicy notes like cinnamon and black pepper from the bark.
