At the end of the summer of 2022, we were introduced to a small Spanish plum through an organic importer. The perfume, color, and flavor of this little fruit were simply phenomenal. Unfortunately, by the time we discovered it, the season had already come to an end before we could create a blend with these exceptional plums.
The following summer, in 2023, we finally managed to secure a small quantity and work with the fruit for the very first time. From that first experiment, Lazy Red Amber was born.
Lady in Red is a fresh interpretation of that original blend. For this second vintage, we once again paired the intensely aromatic Spanish plum with a touch of Zibibbo Nero, a fragrant grape variety originating from Sicily and also known in Germany as Muscat d'Hamburg. The grape brings an elegant floral character to the blend and adds an extra layer of depth through its subtle yet distinctive presence
Together with the Mirabelle de Nancy, these Spanish plums rank among the most perfumed fruits we process. Because we allow the fruit to reach full ripeness before adding it to the beer, these blends are generally more cloudy than our other fruit beers. Even so, we remain committed to our natural approach and do not use any fining agents or products to force clarification.
The result is a vibrant and elegant beer in which juicy stone fruit, floral notes, and the delicate perfume of the grapes come together beautifully, supported by the refreshing acidity and complexity of the lambic.
