Our signature blend balances the textural elements of European Bittersweet apples with the bright acid of American heirloom varieties in layers of unfolding aromatics. All apples grown in our orchard. Wild yeast primary fermentation in stainless steel and neutral oak. Secondary fermentation in the bottle. Hand disgorged. Just a hair off-dry. 8% abv. Label art by Autumn. 265 cases made.

Crazy rocket launched cork, slightly too frizzante. Lots of foam, but not a bottle bomb.
Strong bittersweet & sharp nose, lots of old cherry & leather behind fresher goldrush or something equally bright.
Taste is drier than expected, thinking it was still working in the bottle. Macerated apple, crab sharpness, leathery, lemon, old rose candies. Old oak.
Perfect piercing carb on a kinda thin body with some lingering pectin. Decent abv is bolder than I remember in years past.
