Mono Maize is our farmhouse ale brewed with flaked corn. The corn brings new food sources for our house yeast culture to make distinct citrus and fruit aromas not found in our other blends. We then aged this on whole fruit at a rate of about 2 lb per gallon which allows the base beer aromas to still shine.
