Experience the complexity of a spontaneously fermented wild ale, cerated solely with native wild yeast and bacteria, and a rich brettanomyces presence. The beer underwent fermentation in a homemade coolship and was the aged on locally sourced apple skins. Pours yellow to golden, partially cloudy, aroma is funky and wild, brimming with ripe white fruit notes and a distinct brett character. On the palate, the beer presents a gente tartness, coupled with an alluring hint of sweetness from the apple and pear aroma, culminating in a satisfying medium tart aftertaste.

Bottle sample from The Cider Man at Wild Festival Groningen. Cloudy pale yellow color, small white head. Aroma of dusty apples left in damp basements. Taste is discarded overripe apples scattered around dusty attics. Delicious.
