It’s time for our WINTER BREW… A full-bodied, high-octane brew capped off with our use of cinnamon and mace. This beer will warm you all the way to your bones. Brewed only one day a year. We only bottle 4200 liters, 550 12 oz. cases, and a handful of kegs, so get it while you can.

Bottle shared at Chrisso’s May 2014 tasting 25/05/2014. Thanks to Chris. Clear mahogany brown / red coloured pour with a halo of losse off white head. Aroma is caramel, liquorice, some musty earthy notes and a touch of soy. Flavour is composed of salted caramel, toffee, touch of subdued christmass spices. Palate is medium sweet. Spices have dropped out a bit.

Bottle at the chriso May 2014 tasting - London. Vintage 2013. Pours clear, dark amber with a frothy white head. The nose has rich bread, toffee and nutmeg. Medium to big sweet flavor with sugary bread, light spices, toasty toffee. Full bodied with fine to average carbonation. Sweet finish with nice toffee, holiday spices, fruitcake. Solid.

Tasting at the ever gracious ChrisO’s. Clear deep amber - red beer, decent pale cream cour head. Palate is airy and light, superfine carbonation. Airy malt, very light cream. Mild dark toffee streak. Spice kicks in, not too hot. Touch of dried fruits. Okay.

Bottle @ Chriso May 14 tasting. Pours darkest brown, cream head. Big choc aroma, lots of spicy fruit cake in the taste with sweet orange, dried fruits, almonds, burnt sugar.. others in the group gave this the thumbs down but I quite liked it.

Growler - Vintage 2012 - Dark malts with a bit of cinnamon in the finish and some sourness. Cloudy brown with a beige head. A little roast, some spice and a bit of sourness. This didn’t age well.

Bottle at Chriso. It pours deep brown with a medium beige head. The nose is sweet, spicy, a bit of tangy HP sauce, gingerbread, toasty, brown bread, dried fruits and light tang. The taste is toasty, caramel, big spice, warming alcohol, earth, dark fruits, caramel and wood with a dry, earthy finish. Medium body and moderate carbonation. Not much depth to it really. All about the spice. So-so.

Bomber with red wax. Pours a dark amber with medium beige head that lasts leaving spotty lacing. The aroma is a strong spice and caramel. Medium mouthfeel with strong spice, nutmeg and light spice finish. Good.

Rich deep dark brown coloured body with a thin tan head and some pungent violet and ruby tints. Aroma of alcohol, nuts, earth, caramel, raisins and some light spices. Medium-bodied; Rich malty flavour with some earth, nuts, caramel, toffee and a little prunes and figs. Aftertaste shows mostly malt and caramelised sugars with a little spicy qualities. Overall, a nice rich malty beer with some good sugars, but a lack of complexity and and depth make it good and not great. I sampled this twelve ounce bottle purchased from Total Wine in Tampa, Florida on 03-January-2014 for US$1.79 sampled at home in Washington on 04-February-2014.

22 oz. red wax top bottle. 2011 vintage. Snifter shows dark brown color with still some white ring of head. Nose is dark malts with nuts and caramel. Flavor has very mild spice, cinnamon and a pepper like note. Flavor is malt forward and work really well in winter. Funny we are drinking this on July 4 th! Mouthfeel is medium with a sweet molasses finish. Decent.
