It’s time for our WINTER BREW… A full-bodied, high-octane brew capped off with our use of cinnamon and mace. This beer will warm you all the way to your bones. Brewed only one day a year. We only bottle 4200 liters, 550 12 oz. cases, and a handful of kegs, so get it while you can.

Sample at the HSC Sour Beer Tasting on 06/19/2010: 2009 bottle acquired via trade. This beer pours a dark brown color with a medium light beige head that recedes steadily. Stringy, spotty lacing on the glass. Aroma of sweet malt and molasses primarily, along with a touch of spice. Medium body with flavors of sweet roasted malt, molasses, cinnamon and chocolate. The finish is malty with a sweetly spiced aftertaste. Pretty good all around.

enjoyed on Tap at Chan’s Wine World in PCB, pours thin black with a medium frothy dark tan head. Aroma is peppermint, hops, licorice. The flavor is a mix of licorice and roasted malt with some spicy hops and cinnamon in the finish. Very nice and easy to drink with the alcohol well hidden.

2007 1L waxed swingtop shared by cdumler. Thanks! Pours a clear and very dark ruby color with a medium off-white head. Decent head retention and low lacing. Aroma of dark fruits, nuts, sawdust and citrus. Taste is heavy on the sunflower seeds, with notes of dark fruits, caramel, honey, spice and a nice warming alcohol. Muddled hops in the finish. Full bodied.

Curtesy of Gunhaver. Ruby color, light foam. Aroma is of spices (maybe pepper/corriander) and malt, fruity with apples/figs. Gives a nice warm aftertaste. updated rating. 2008 bottle aroma came off with a vegetable/tomato powder leather like like nose with spices and notes of chocolate. Taste of chocolate malts, spices some cinnamon and roastiness. Sme dark fruits and vegetable palate.

Enjoyed at the csbosox tasting 7/3 courtesy of tjthresh. Pour is brown with some reddish highlights. Aroma is almost a scotch roasted toffee malt, very sweet. Taste is scotch malt and the spiciness - some nuttiness and pepper (black - spicy). The finish is very dry and quick.

Thanks to aracauna for the ’03 Sampled as part of an incomplete vertical consisting of the ’03, ’05 and ’06. Spicy malt nose that comes easily from a murky dark brown brew. Lots of malt flavor tempered by the hops, this vintage was the best of the ones sampled due to it’s having a bit more complexity.

Bottle. Young apple vinegar aroma - reminds me of my grandfather’s fruit cellar - mace seems to dominate. Dark brown color with small head. Flavor most like a spiced cider that has just started to turn or spiced applesauce made with over-ripe apples - again mace seems to be the dominant spice. Mild alcohol burn in the finish. I think I would like this better if the cinnamon came out more.
