Blended using 4 unique apple wines aged in both Rye and Bourbon American whiskey barrels. Apple wine fermented with irish stout yeast, belgian trappist yeast, sake yeast, and our original Colfax Classic. Final product is finished with tupelo honey aged in Bourbon barrels and a lingering open-mouthed kiss of fresh-pressed apple juice.

Pours hazy gold into a snifter. Apple, oak and honey aromas. Dry with sweet/sour apple upfront turning to oak and vanilla before returning to apple cobbler in the medium length hot finish.

Refrigerated 12 oz. brown bottle poured into a white wine glass. Pours hazy golden with small ring of head that dissapates fast. No lacing, medium body, low carbonation, and nice apple aroma. Taste is oak, rye whiskey, some apple, and a hint of honey, Complex cider, but it is doesn’t meld for me.

Bottle (with some disturbingly chunky sediment). Pours with a must gold hued body with chunks (label suggested swirling). No real head. Aromas of barrel, spicy, musty, oak, rye, flint, apple sauce and lots of minerals. Slightly boozy, medium fruity. Flavors show lots of toasty oak notes: lactone and vanillin. Some isoamyl acetate, which seems a bit common for Crispin. Lots of rye/bourbon notes, apple sauce and cola. Off dry, medium bodied, low tannin but woody finish.

Bourbony apple jack nose. Really awful dingy golden color, opaque, full of floaties, like water and chicken grease in a glass. Bourbon and apple flavor, as expected, with the latter dominant. There is an intrusive plastic component. Tasty and ugly.

Bottle from The Davis Beer Shoppe. Pours hazy gold with a few bubbles. Aroma is fairly bourbon. Maybe also rye. Definitely also apple. Flavor is rather cider sweet - I think it’s more rye than bourbon/van - Mildly woody. Think the honey comes through on the lips. Interesting stuff. Not getting banana ester, so don’t know where the trappist yeast went.

Bottle. Cloudy yellow orange color. Aroma is soft pure whiskey. Taste is apple pie, vanilla, brandy. Nice.

12 ounce bottle from Beer Run. Pours a hazy orange color with a bit of thin fizz. Aroma of sweet apples, earth, honey, vanilla, bourbon. The taste is sweet apples, vanilla, wood, spice, pineapple, citrus, honey, whisky. Medium bodied. Quite interesting.
