Escoffier is our much heralded collaboration with New Belgium Brewing in Ft. Collins, CO. Coinciding with their entry into Michigan in August 2012, this project began with a friendly meeting at our pub. After a few beers and some food, the idea to brew a beer together started to take shape. Surprise! Auguste Escoffier is considered the master chef of the 20th century. His ideas and methods left an indellible imprint on the culinary world, and are still in use to this very day. We named our beer ’Escoffier’ to celebrate the relationship between great food and excellent beer, and how they elevate each other when enjoyed together. If you’ve ever visited our pub, this is the cornerstone of what we try to accomplish. Will we make it again? Only the ghost of old Escoffier knows.

500 ml bottle into tulip glass, bottled in 8/2017. Pours fairly hazy deep orange/amber/light copper color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, apricot, cherry, orange, grapefruit, pineapple, berry, green apple, white wine, mango, melon, papaya, fruit skin, citrus peel, hay, straw, grass, pepper, honey, and lightly toasted bread; with lighter notes of banana, clove, leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast and bready malt notes; with great strength. Taste of big tart lemon, lime, apricot, cherry, orange, grapefruit, pineapple, berry, green apple, white wine, mango, melon, fruit skin, citrus peel, hay, straw, grass, pepper, honey, and lightly toasted bread; with lighter notes of banana, clove, leathery/musty funk, and yeast earthiness. Light-moderate peppery yeast spiciness and Brett tartness on the finish. Lingering notes of tart lemon, lime, apricot, cherry, orange, grapefruit, pineapple, berry, green apple, white wine, mango, melon, fruit skin, citrus peel, hay, straw, grass, pepper, honey, lightly toasted bread, leathery/musty funk, and yeast earthiness on the finish for a while. Great complexity, robustness, and balance of fruity/funky/spicy yeast and bready malt flavors; with a great malt/tart/spiciness balance; and zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tart/spiciness. Medium carbonation and medium-plus body; with a smooth and moderately creamy/slick/acidic/sticky balanced mouthfeel that is nice. Mildly increasing warmth of 10% after the finish. Overall this is an excellent imperial wild ale. All around great complexity, robustness, and balance of fruity/funky/spicy yeast and bready malt flavors; very smooth and easy to sip on with the modestly tart/spicy/drying finish. Great well rounded fruity/funky Brett complexity with balanced malts. Never overly sweet/heavy feeling for the ABV. A very enjoyable offering.

Courtesy of JPDurden24. 16oz can pours up with a clear copper body with gold edges that supports an off white head of foam. The aroma offers up earthy grapefruit peel, orange wedges, mild tartness and a faint funkiness in the background. The taste is similar with smooth sweaty vinegar, mild tartness, a bit more vinegar to midway and then a mix of grapefruit and lime notes into the finish. Tasty stuff.

Can pour into goblet. Reddish amber/gold; small, brief head. Tart, fruity, slightly sour. Very nice tasting now, but I am guessing it will taste more complex with age. I better put some away.
