This sour, wild red ale represents the heart and soul of BareWolf, and the pinnacle of our tradecraft as brewers. 3 unique mixed-culture wild ales were blended into this remarkable and luscious beer: Golden Ale aged in French Oak Pinot Noir Barrels, Brown Ale aged in French Oak Cabernet Sauvignon barrels, and Red Ale aged in French Oak mixed California red wine barrels. Each component was individually fermented and matured with distinct wild cultures, and the finest barrels were blended for this brewers’ reserve ale.

On tap at BareWolf, pours a clear dark amber with a small off-white head. Aroma is fairly complex, with plenty of red wine barrels, some tannins, and light wild yeast. Flavour is not exceedingly acidic or vinegary, with red wine vinegar, balsamic, some Worcestershire sauce, and bugginess. Real nice attempt at a difficult style. It’s not totally bang-on—maybe a touch too much balsamic and residual sweetness, and just not enough complexity. But it’s done very well.
