Gravenstein apples are thought to have originated in Denmark, with the first mention over three-hundred years ago. This variety is prized for its flavour and cold hardiness, but it is prone to disease so is underplanted. They get these apples from hundred year old trees. They underwent twenty days of carbonic maceration before being crushed and pressed to finish primary fermentation in tank. The cider is can conditioned with a little yeast and sugar. Only 80 flats were produced.

473mL can at East Van Cider Fest, pours a clear blonde, no head. Nose is full of big farmhouse notes, big hay, and some tannins. Flavour is super dry, with fresh hay, barnyard funk, and tannins. Dry, with tons of farmhouse depth. Excellent.
