Avec L’Ours, les assembleurs du Trou du diable vous proposent un concept évolutif : chaque assemblage à venir sera distinct, laissant parfois jouer des notes plus intenses, qu’elle soient acidulées, amères ou fruitées.
Il s’agira toutefois d’un mélange à vingt pourcents d’une bière de seigle sûre vieillie deux ans en barrique de chêne de Banyuls, et quatre-vingt pourcents de jeune saison. Le nez, aux notes délicates de rancio et de fruits séchés, portera d’abord à croire que nous avons affaire à une bière sûre. La bouche nous proposera aussitôt une bière jeune, acidulée et subtilement boisée, le tout s’étirant en une finale rafraîchissante.

Bouteille 75cl, assemblage 014, merci Pierre T. Dorée sur léger trouble, col blanc. Arôme est fruité abricot, boisé de chêne avec un relant un peu Chardonnay. Palais est léger malté, grains, fruité abricot apportant une belle note de douceur et de funk venant de brett? Le tout porte une belle alternance entre suret et côté adouci et un aspect épicé du seigle.

Cloudy blond color with no head. Sour aroma, a bit of acetic acid. The mouthfeel is dry, moderately sour, lightly lemony, with a very light funky touch. A bit woody and astringent in the final.

Trou du Diable Ours Blend 6 6% Thanks to Max and Remi for this bottle. It's a clear bright gold with a pear, musty plum and oak tart aroma. Light bodied and dry it is somewhat sweet with sweet tarts, pear, candied fruits and light malts. Easy drinking and something wine drinkers should like. ---Rated via Beer Buddy for iPhone

750 ml bottle @ Kick. Hazy yellow/orange body with a nice, dense white head. Aroma is mild funky/Brett with acidic fruit, lemon, grapefruit and floral. Flavor is super refreshing, acidic fruit and berries with mild malt, farmhouse, lemon, situs zest and a tart fruity finish. Quite light bodied, still in perfect balance with the flavors. Long aftertaste. Very nice, rather light, but distinct in flavors and quite smooth. Lighter and less acidic than your traditional Geuze/Lambic, more like a combination of a fruity Saison and Lambic with a lovely Orval reference, still way more dry and fruity. Lovely and dangerous easy to drink.

Batch #16, embouteillée le 28 juillet 2015... J’adore! Le côté sauvage peut être plus prononcé un peu mais c’est vraiment très bon. C’est à la fois sec et onctueux en bouche, ce qui surprend. Le goût de citron est juste assez mordant. Au moment de verser, les bulles ne font pas comme d’habitude, c’est un peu louche. Bravo le TDD!

Gushing to small white head over coldhazed yellow-orange beer. Brett nose, floormop variety included, wet cardboard, other grains and lactic acid; lemon, buttermilk. Mild sour, lactic acid, again a bit diary/buttermilk. Sourish herbs, citrus; slightly woody. Quite light body, acidthinning. Feels well-carbonated, certain slickness (wheat or other grains). Nice mellow sour !

Draught. Hazy yellow colour with a mediumsized creamy white head, which leaves some lace. Aroma is green apple skins, some citrus, mild yeast, and some lactic and acidic wood to it. Flavour is quite similar, with a quite big tartness to it. Somewhat dry palate.

Vanilla, cider and light sulfur in the nose with bits of lemon, very light oak and wet grass. Some guava and light pineapple signify a mellow, enjoyable brett presence. No oak or toastiness. Mellow.
In the mouth it’s tart, but wheaty and somewhat bland. There’s a light sharpness/astringency that’s not ideal, with a lot of sulfur (which i like, but probably is also not ideal). Carbonation is high and not tight at all, stripping more potential perceived body. Other than the light acetic character and sulfur, it’s clean and there’s no alcohol. But its very tired and thin at only ~1 year old.

Poured from bottle thanks AdamChandler hazy light gold with a thin white head. Aromas of citrus grass and mild funk. Taste is similar with hints of honey.

750 ml bottle thanks to AdamC. Batch 7. Color is a slightly hazy gold with a nice level of carbonation. Aroma shows me mild oak, subtle Brettanomyces, tame citrus.
Citrus with a touch of Brett funk, grass clippings and mild grain. Carbonation gives a nice tingle that ends crisp. Overall very nice mouthfeel with a great crisp aftertaste. I enjoyed this.
