Avec L’Ours, les assembleurs du Trou du diable vous proposent un concept évolutif : chaque assemblage à venir sera distinct, laissant parfois jouer des notes plus intenses, qu’elle soient acidulées, amères ou fruitées.

Il s’agira toutefois d’un mélange à vingt pourcents d’une bière de seigle sûre vieillie deux ans en barrique de chêne de Banyuls, et quatre-vingt pourcents de jeune saison. Le nez, aux notes délicates de rancio et de fruits séchés, portera d’abord à croire que nous avons affaire à une bière sûre. La bouche nous proposera aussitôt une bière jeune, acidulée et subtilement boisée, le tout s’étirant en une finale rafraîchissante.

Ass No 7. light yellow with a little haziness and a yellowish white head. Good wheat aroma with a little bit of banana, spice, wood and brett. Decent pillow-y carbonation, light oily finish. slightly dry. Lots of brett here, not a funky style, more of a dry tart taste with some very light tropical fruits. weak malt bill but wheat is present. I like the lemon zest going on here.

A hazed blonde ale with a thin white head. In aroma, nice sweet sour cherry with light Brett, light lactic notes, light fruity esters, light and smooth. In mouth, sweet fruity malt with light ground cherry, light buttery notes, grapeskin, a bit of lemon, interesting. On tap at vices et versa.

Bottle - Funky, citrus and stone fruit. Cloudy gold with a decent white head. Very light funk and mellow tartness. Very light and easy drinking.

Bottle: Poured a hazy golden color ale with a medium size foamy head with good carbonation but minimal head. Aroma of tart notes with light dry funky ester is quite nice and well balanced overall. Taste is also a great mix between some tart notes with some oak notes also perceptible and light funky ester finish. Acidity is well balanced and doesn’t disrupt the overall balance. Body is about average for style with good carbonation. Great balanced and great complexity makes this a criminally underrated beer.

Bottle from a trade. Shared @ RBBWG 2015. Orange colour, white head. Medium carbonation. Fruity notes of orange and grapefruit. Light vinegar. Sour with sweet hints. Easy drinkable and refreshing. Good!

Thanks to JefVerstraete! 750 ml. bottle sampled @ RBBWG IV. Hazy orange, little white head. Nose is orange, sour USA-style, cheap Champagne. Taste is mineral, sour yoghurt, malty, mineral, lightly herbal, sour, touch horseblanket, orange peel, yeast, thick standard brett. Med. mineral body. Touch dry. Decent & satisfactory USA-style sour. Nice beer, a bit plain and simple.

Bottle @ RBBWG 2015 shared by JefVerstraete. Hazy murky pale yellow almost milky color, no head. Smell and taste lightly sourish, yellow fruits, orangepeel, a hint of yeast. Well balanced but a bit boring imo.

Little hazy blond beer, small irregular white head, little stable, non adhesive. Aroma: sourish, lemony, funky, artificial brett notes. MF: soft carbon, medium body. Taste: pretty sour, vinegar, bit lemony, fruity, sourish, unpleasant sour. Aftertaste: lemony, some vinegar, peaches, bit sugary, little bitter, resinous, bit off.

750ml bottle shared @EurHop (Rome). Pours unclear pale gold with a medium white head. Aroma is floral, grain, citric, brett, like a farmhouse saison, amazing! Flavour is gently sour, grain, lemon, a bit tart with some astringency, good persistence. Medium to light body, well carbonated. Refined and very well brewed, well done!

Bottle shared thanks to JulienHuxley. Pours very hazy dark full golden with a thin off white head. Aroma of brett, manure, barnyard, floral notes, fruit, big funky. Flavour is light sweet, moderate bitter. Medium bodied with soft carbonation.
