For Chaos Realm III, we wanted to combine two things we love at Cypher: big, expressive hops and rich malt character.
The result is a huge 9.0% Black IPA, built with a layered malt bill, calculated kettle hopping, a heavy cold whirlpool addition and a massive 30g/L dry hop.
Voyager Schooner, rye, flaked wheat, crystal malts and Midnight Wheat create the beer’s deep black colour and rich malt character, bringing smooth dark chocolate, subtle caramel and restrained roast without becoming harsh or burnt.
The hop program is equally extensive. Simcoe runs through the boil, followed by Simcoe and Citra in the cold whirlpool. Simcoe and Citra DynaBoost were then introduced through a dip-hopping process as the wort entered the fermenter.
Citra Cryo went in during active fermentation, followed by a huge post-fermentation charge of Riwaka, Nelson, Krush and Nectaron.
During final conditioning, Riwaka and Nelson Hop Kief from Freestyle Hops in New Zealand and Citra HyperBoost were added to lift and refine the finished aroma.
As for tasting notes, we deliberated over them for some time, over many a can of this beast, before deciding this one is best left to you.

From a 440ml can on 9/9/2026. Pours a deepest brown with a medium light tan head. The nose is relatively subdued given the size, with some dark chocolate and light pine. It's also very smooth for the size, with dark chocolate, hints of caramel, a good dash of citrus, finishing with a medium but lingering bitterness with pine quite prominent. Has a lovely velvety mouthfeel with moderate carbonation. Very enjoyable, if less assertive than I was expecting.
