A clean, crisp lager, combining tropical hops and natural carbonation through secondary fermentation, coming together in a beer have been looking forward to drinking ourselves!
Character: A pale coloured light and crisp lager with a white grape-like tropical hop aroma. A subtle malt sweetness balances out a mild bitterness, leaving this beer balanced and supremely drinkable.
Naming: A concept from martial arts, Zanshin refers specifically to a state of sustained awareness and composure maintained even after the decisive moment of a match has passed. This beer was secondary fermented in the can. While the beer gained most of its character during primary fermentation and maturation, the fermentation in can, and subsequent maturation in controlled settings from there, made it feel as though Zanshin was a concept that connects well. A beer's journey does not end when it is brewed, and as makers we are committed to maintaining our focus on it right up until it reaches your glass. That is our Zanshin.
Food Pairing: Vegetable-heavy gyoza with "misodare" dip, prawn tempura, florentine biscuits.
Brewer's Voice: For this newest lager release, we wanted to take inspiration from our 10-year anniversary lager and offer it with a fresh refined spin on it. This lager was brewed with premium Pilsner malt with just a splash of Vienna and wheat for body. This gives the beer a light and crisp finish that pairs well with the selected hops. For said hops, we went for a combination of Nelson Sauvin, giving the beer a soft white grape and floral aroma, and Strata hops, contributing a much more tropical berry flavour with hints of resinous pine. This beer was cold conditioned in tank, then again in the can with some yeast to give it a natural bright carbonation character. We wanted this beer to have a sparkling white wine-like character to it while keeping its lager like crispy finish. Refreshing, floral and fruity all in one, it will pair well with plenty of light summer foods or can just be incredibly drinkable all on its own.

Can at Itami airport. Super fruity nose. Citrus includes lime and mandarin orange. Crisp crackery malt. White grapes in there too. Herbal and grassy. Rather sweet, a bit more than necessary. There is something slightly weird and sugary in the finish. Maybe it needed more time to fully referment. Good, could be better.
