Blended Barrel-Aged Ale
Madness & Civilization is a panorama of our barrel aging program—oak-aged beers that emerge from their individual silences to find structure and voice as a unified composition. This is the result of an unpredictable state of permanent happenstance—a dialogue with our evolving approach to blending that challenges convention and circumstance. Each release will include multiple threads and is likely to approximate the style of an imperial stout.
This iteration was aged in a 500 liter port barrel that previously held Damon, refilled with a blend of six different beers including Damon and Everett. Aged for 26 months.

[5/12/16] Draught at Warpigs in Copenhagen. Black. Great aroma full of chocolate, bourbon, vanilla. Sweet and slightly bitter flavor with chocolate, bourbon, vanilla, roast, a bit of dark fruits, and a bit of booziness. Full-bodied, thick, velvety.

Pours black with a small tan head. Aroma has notes of roasted malt, chocolate, vanilla, cocoa, licorice, coffee and alcohol. Taste is medium to heavy sweet and medium bitter with a long warm, chocolate, coffee and licorice finish. Body is full, texture is oily, carbonation is soft to flat.

Keg @ WarPigs. Pours viscous black with a small mocha head that leaves some sparse trace on the glass while dissipating. Smell is malty, roasty and tiny earthy with roasted malts, burnt caramel, toffee, vanilla fudge, charred wood, dark roast coffee, dark chocolate, raisins, prunes, minerals and hints of alcohol. Taste is sweet, bitter, malty, tiny fruity and tiny earthy. Mouthfeel is round, oily, roasted astringent, tiny boozy and near full bodied. Finish is sweet and bitter with heavy roast, caramel, toffe and hints of port wine. From tap at Warpigs, Copenhagen. Black color with no head. Malty aroma, roasted, chocolate, licorice, dark dried fruits, wood, port wine, alcohol. Sweet and bitter taste like aroma, chocolate, wood and port wine. Almost full silky creamy body with soft carbonation.

Tap@Hill Farmstead Day, Warpigs, Copenhagen (12/05/2016) - pours black with almost no head. Roasted and sweet malty aroma and taste with chocolate, coffee, caramel, Port infused wooden notes into the sweet port enhanced malty finish. Lovely.

On tap at Warpigs, pre-CBC. Pitch black. Smells like dark cherries, sherry, whiskey, raw almonds. Taste follows the same notes, together with cocoa, chocolate and coffee.
