Blended Barrel-Aged Ale
Madness & Civilization is a panorama of our barrel aging program—oak-aged beers that emerge from their individual silences to find structure and voice as a unified composition. This is the result of an unpredictable state of permanent happenstance—a dialogue with our evolving approach to blending that challenges convention and circumstance. Each release will include multiple threads and is likely to approximate the style of an imperial stout.
This iteration was aged in a 500 liter port barrel that previously held Damon, refilled with a blend of six different beers including Damon and Everett. Aged for 26 months.

Draught @ Hill Farmstead Day, Warpigs, Copenhagen. Pours pitch black with no head. Aroma of syrup, roasty malts, dark chocolate, licorice, coffee, oak and vanilla. Taste is sweetish, syrupy and smooth with mild roastiness, dark chocolate, coffee, vanilla and cocoa. Finish is heavy, sweetish and slightly syrupy with some sticky notes, hints of roastiness and vanilla. A lovely dessert beer.

No head. Aroma is sweet boozy, dark sugar, dark malts, booze, minerals, bark, even more dark sugar, dark fruits, caramel, chocolate, coffee, burnt caramel, grass. Taste is slightly sour-ish dry, dark malts, dark sugar, oak, alcohol, minerals, burnt caramel, burnt coffee, dark fruits, grass, bark. Medium bitterness, dry boozy mouthfeel. Fair enough, not really my cup of.

On tap at Warpigs. Black with a tiny off-white head. Huge, vinous stout aroma with dates, figs, raisins, licorice, chocolate, vanilla, coconut. Sweet, rich flavour with dried fruit, hard roasted notes and alcohol.

Tap @ Warpigs, tap take over. Black without head. Aroma is sweet, roasted malt, port, chocolate and wood. Flavor is very sweet and rather bitter sweet and rather bitter finish with lots of warming alcohol. Oily and soft. A bit boozy. 120516
