Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Pours hazy orange color, topped with a frothy yellow-white head, foamy and slowly settling. Yeasty aroma with some notes of bananas and spices, some sweet notes, later on mostly spices. Yeasty with moderate spices, some hint of sweetness in the finish with a bit bittery herbal aftertaste. Sparkly feel, medium body. Ok.

Wild gushing while opening. Murky honey. Soft yeast, honey malts, walnut on nose. Fine. Medium body. The taste is dry. Feels Belgian. Spicy yeast. Light bitterness. A refined beverage

Bottled. Slightly hazy golden colour with a mediumsized white head. Aroma is herbal, mildly spiced along with some freshly cut grass and yeast to it. Flavour is quite similar, but has a quite peppery finish to it.

Pours hazy yellow/orange with a frothy, quite quickly diminishing white head. Smells fruity and grassy. The aroma contains malts, hops, grass, herbs and yeast. It tastes light sweet and medium to heavy bitter with a dry finish. Medium body, round mouthfeel, soft carbonation. Excels in its style but could have been better balanced.

Little gushy-gushy. Hazy pale amber with thin off white head. Sweet caramel malts, coriander, mint, white raisans, spices. It’s a bit dank and passed its prime I’m affraid. Medium sweet and bitter. Medium body soft carbonation. Still a nice drink.
