Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Bottle shared at Maakun’s. Little gushy-gushy. Hazy pale amber with thin off white head. Sweet caramel malts, coriander, mint, white raisans, spices. It’s a bit dank and passed its prime I’m affraid. Medium sweet and bitter. Medium body soft carbonation. Still a nice drink.

Bottle shared thanks to sjogro. Slight gusher. A bit hazy darker golden with white head. Lots of sweet malts, some oxidized notes with sherry and dried fruits. Fresh apricot, light honey and nuts, some strawberry jam, orange juice. Quite fruity overall with fruity sweetness and a soft grassy bitter finish. Medium bodied with a bit fizzy carbonation.

330 ml bottle into signature chalice, best before 9/15/2018. Pours lightly hazy golden orange/amber color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big lemon, orange, peach, pear, apple, melon, white grape, peppercorn, coriander, clove, banana, light bubblegum, wheat, biscuit dough, light honey, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, bready malt, and light-moderate earthy hop notes; with great strength. Taste of big lemon, orange, peach, pear, apple, melon, white grape, peppercorn, coriander, clove, banana, light bubblegum, wheat, biscuit dough, light honey, herbal, floral, grass, and yeast earthiness. Moderate yeast spiciness and light herbal/grassy bitterness on the finish; with lingering notes of lemon, orange, peach, pear, apple, melon, white grape, peppercorn, coriander, clove, banana, wheat, biscuit dough, light honey, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy yeast, bready malt, and light-moderate earthy hop flavors; with a great malt/spiciness balance, and zero cloying flavors after the finish. Moderate dryness from carbonation/spiciness as well. Medium-high carbonation and medium body; with a very smooth, moderately creamy/grainy/bready, and fairly crisp/sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 6.5%. Overall this is a great Belgian pale ale! All around great complexity, robustness, and balance of fruity/spicy yeast, bready malt, and light-moderate earthy hop flavors; very smooth, crisp, and pretty refreshing to drink. Really spot on for the style. A very enjoyable offering.

Bottle from Biernavigatie, BB 04.05.19, medium sample. Hazy golden color, medium frothy head. Quite spicy in aroma, bit spicy yeast, slight fruity, bit nutty. Bit sweet in taste, soft bitterness. Decent.

(bottle, 33cl, heavy gusher) Hazy, orange-golden colour with a blond and quickly diminishing foamy head. Bready and yeasty malty aroma with notes of caramel, brioche, fruity accents of banana and fruit confit. Sweet and delicately bitter flavour, medium to light bodied with a tame carbonation. Bready malt character with caramel, yeasty and moderately fruity notes; sweet and cara-malty finish with a delicately hoppy bitterness and a soft fruity, delicately vinous tail. The gushing really trappissed me off. 01.XII.16

[ As Spencer Trappist Ale ].Unclear medium yellow orange color with a average, frothy, good lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, pale malt, light to moderate hoppy, grass, moderate yeasty, belgium yeast. Flavor is moderate sweet and light to moderate bitter with a average duration, belgium yeast, grass, sweet malt. Body is medium, texture is oily to watery, carbonation is soft. [20150808] 7-3-6-3-12

F: not big, off-white, poor retention. C: dark gold, hazy. A: malt, orange peels, coriander, spicy, yeast, peach, banana. T: malt, orange peels, spicy, coriander, yeast, pepper, hint of salt, banana, bread, medium body, good carbonation, good but nothing very special, 0,33l bottle from Prik&Tik Kampenhout.

I forgot about this brewery until noticed on shelf at an upstate store. Hazy burnt golden pour bit of gusher. Nose is yeast and some fruit. Tastes of banana, yeast, musk, cloves hint of wine. Soft fruity finish.

33cl bottle. Poured golden color with a thick white head. Dried apricots, Belgian yeast, mild spices. Flavor has apricots, hops, floral notes, mild spices, grass. Good Belgian ale, hits all the right spots.
