Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Bright gold pour. Sweet hop and spice flavor. Full flavor, not halfway made. Delicious and satisfying.

Pear, lemongrass, candi nose. Clear amber, medium head. Hay, stewed pear, fairly dry. Subtle hint of clove. Medium body, moderate carbonation. Very nicely balanced, well executed. Impressive!

33 cl bottle poured into a Trappist glass. Hazy golden amber colour with a lumpy white head. Fruity aroma with yeasts - pears, banana and a spiced note. A herbal bitterness. Taste is light sweet. Medium bodied. Drying fruity finish. Fine and well balanced American in Belgian style.

Bottle. Malty and spicy yeasty aroma and taste, honey, candied sugar, liggt caramel notes, liggt sweet, medium bitter. Medium body, malty and spicy yeasty bitter finish. Ok.

Bottle at on-line tasting. Golden color with small white head. Aroma of malt, Belgian yeast, candies. Sweet taste with malt, caramel, candies, yest. Good.

Smooth and a bit of bananas. But patersbier is still far from my favorite style. Not much going on for flavor.

A reasonable facsimile of a Belgian abbey ale, but just not quite there. Straw, clove, stone fruit, and vanilla are present, along with a slight yeasty metallic tone and faint notes of wort and vegetation. Bananas, pennies, and mild floral hops come through on the finish. Just a little off, as is everything I've tried from this brewery so far.
