When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

On tap at Off Color Mousetrap Chicago. Hazy gold colour lasting white head. Saison aroma and flavour. Creamy in the mouth. Some peach flavour. Some sweetness. Some funky character. Kinda a mid saison not light but not full on funk either. Decent.

Bottle thanks to AJ. Pours a hazy gold with small white head that lasts. The aroma is floral, yeast, pure sugar. Medium body, funky, yeast, lemon zest, light tartness, very good.

Draft. Golden beer with a cream head. yeast and light spice aroma. yeast and light spice flavor with light tropical fruit. Medium bodied. Yeast and light spice linger.

Nice creamy mediumlasting head. Aroma is slightly sour-ish fruity, grapefruit, tangerine, citrus peel, rhubarb, unripe berries, hay, grass, sorrel, lemon. Taste is slightly sweet grassy, flowers, yeast, sugar, hay, banana, grain, oak, citrus peel. Medium bitterness, very dry mouthfeel. Fair enough.

Hazy and blonde. Aroma has a nice spicy, wild, estery aroma. The palate is light, sweet and a bit dusty, with a herbal dryness as well. Decent...though on the palate it’s not as bright as on the nose.

Appearance is a hazy yellow amber with an off white fine head that lasts a long time and some lace. Aroma is very pleasant with spice, Caramel malt, yeast. Flavor doesn’t quite remind me of the saison, similar perhaps But not quite. A little fruity sweet upfront with good effervescence. There’s also some weed like Hops in there, which is nice. Great body and finish for drinking.

Bottle from J’s. Pours a glowing gold with a tiny white head that dissipates fairly quickly. Light barnyard aromas, musty lemon and sage. Carbonation was a little low, but lightish body. Lemon zest, cobweb, sage and crackery malt on the palate. Light pepper and cardamom on the finish. Maybe a touch boozy.

Sampled on draft at 3R6P this beer poured a murky bright golden-apricot color with a medium sized fluffy orange-white head that lingered and left good lacing. The aroma was yeasty, chalky, citric and musty. The flavor was chalky, citric, yeasty and musty. The flavor was chalky, citric, yeasty and musty. Medium length finish. Medium body. Ok.
