Farmhouse Ale
When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Draught at CBC 2014. Hazy golden liquid with medium white head. Aroma of perfume, white pepper, bread and bubble gum. Taste is dry and light bitter with notes of perfume and lemon. Light to medium bodied with medium carbonation. Nice stuff.

Turbid gold with a frothy lace - nose is bursting with tropical fruit esters of mango, pineapple, melon - the hops add a nice, fresh, herbal character that compliments this quite well - there are also some underlying notes of toasty grain and lemon peel - smells pretty awesome, actually - the flavor has a light acidity up front, along with mild bitterness and the herbal hop character - after that, if is medium-sweet, with a more subdued mixture of the esters from the nose - finish has a slight return of the hop character - quite nice, but the flavor does not live up to the awesomeness of the aroma - it is also a bit too sweet for my particular saison tastes - still, damn solid.

The Sampler, Brooklyn 12oz ($2.50): Pours a really light orange with some clouds. Aroma is funk, lemon, and some other fruit. Taste is that of a very well balanced saison. It be only a tad fruity. Has a nice amount of funk. Pretty light body for what is a comparatively high alcohol beer for the style. Really easy to drink with some complexity.

CBC Session 2. Hazy gold beer, small white head. Palate is light and softish. Semi dry. Lighy creamy malt, thin, sweet and dry. Mild fresh orange led citrus struggles to overcome the sweet malt. Trace of tangerine and spice. Light dry finish. Okay.
