When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Aroma: The aroma of this one has a fruity, spice, and lightly funky nose
Appearance: Pours a murky gold-orange, small head, medium, streaky lace
Flavor: This one has a pretty clean flavor, more spice than fruit, with a light-medium funk
Palate: The body is light-medium and easy drinking, with a tingly feel, and a dry and funky finish
Overall Impression: This beer has a tasty Saison flavor to it, with some good on-style flavors to it. I enjoyed this beer.

Bottle shared by me at Paul’s. 300th saison rate. Pours cloudy yellow with white head. Nose/taste of lemon, saison yeast, lemongrass and peppercorn. Lighter medium body.

This 12oz bottle tastes way better than what I had on tap. I had to buy this single bottle in Kansas since I can’t get a decent singles selection anywhere in Chicago. Poured into a Wonder Woman shaker glass. Color is lightly hazy pale gold. Head is medium sized. Aroma is strong and multifactorial. There are so many crazy elements on the nose: melon, passion fruit, tropical mango, and bright tangerine . Shit is kray on the nostrils. Flavor is a milder version. Spritzy carbonation actually takes away some of the awesome kray from the aroma. But insane yeast character without being intensely banana or traditional esters. And a perfect melding of the hops into the structure.

Draft @ CBC 2014. Pours a hazy yellow color with a white head. Has a fruity malty spicy hoppy aroma. Fruity malty spicy hoppy weak yeasty flavor. Has a fruity malty spicy hoppy finish.

Draft - Lemon, grass and grapefruit. Cloudy yellow with a decent white head. Light citrus, farmhouse funk and some spice. Light bitterness that finishes sweet.

Bottle thanks to Ferris! Pours a hazy light gold with a touch of orange and a white head that dissipates quickly to the edges. Aroma has some light fruit with some sweet grains, and a bit of dry yeast underlying. Flavor has some grassy/dank hops with sweet grains and a dry yeast finish.

[5/2/14] Draught sample at Copenhagen Beer Celebration. 2nd session. Hazy gold. Fruity and yeasty aroma with a funky hint and some fruity hops. Flavor has light sweetness, fruitiness, some spiciness, yeast, mild hoppiness and a finish with a bit of bitterness. Medium-bodied.

Draft at Copenhagen Beer Celebration 2014, Session 2. Pours hazy gold with a creamy, white head. Nice beer. Some juicy tangerine, light yeast notes, doughy pale bread. Medium bodied with fine to average carbonation. Moderately sweet to finish, pretty well balanced though. Good stuff.

Session 2, Copenhagen Beer Festival, draught. Grey-golden body colour, good lacework from a fair white head. Farmyard and citrus nose. Bittersweet citrus and juicy malts all the way. Very smooth in the mouth. Pleasing (02.05.2014).
