Since our opening we have been on a quest to make a juicy, funky, vinous Saison with a bone dry finish. Trial and error has lead us to this mixed culture. A blend of our favorite 2 saison yeast strains, lactobacillus brevis and 3 different strains of Brettanomyces. The resulting beer is an absolutely crushable saison with a rewarding complexity.

On tap at Cellarmaker. It pours a hazy yellow color with a very small white head. The aroma has lots of lemony orange acidity. The flavor has more brett funk and stone fruit. Creamy mouthfeel with some peaches, light pineapple and a funky basement-like finish with mild acidity. Good. Frothy, creamy, fruity and funky. Very simple though, with not much Saison character actually. The aftertaste is a tad phenolic with some hints of diaper and plastic. Not too strong. Overall, pretty interesting.

On tap at the brewery cloudy yellow / straw coloured pour with a thin white head. Aroma is nice lager note, zesty citrus, , salty, citrus, slightly salty. Flavour is composed of low crisp maltβs, straw, nice cirrus. Zuppylemon zest. Palate is semi crisp, light And refreshing, moderate carbonation. Decent.
