Since our opening we have been on a quest to make a juicy, funky, vinous Saison with a bone dry finish. Trial and error has lead us to this mixed culture. A blend of our favorite 2 saison yeast strains, lactobacillus brevis and 3 different strains of Brettanomyces. The resulting beer is an absolutely crushable saison with a rewarding complexity.

Keg at the brewery taproom Pours mostly clear yellow with a foamy, white head. The nose holds tangy lemon, light funk. Lightly sweet flavour with moderate acidity, salty kisses, lemon, wheat, faint bitter hay. Light bodied with average carbonation. Very clean on the finish, with continuing lemony acidity, light rindy bitterness, hay. Solid.

On tap at Cellarmaker. A bit hazy with a white head. Atoma and taste of brett, pineapple and some funk. Fairly relaxed and easy to drink.

[1/27/16] Draught at Cellarmaker in San Francisco. Cloudy yellow. Great sour aroma, funky, lactic, fruity. Sour flavor, lactic, fruity. Medium-bodied. Really good.

Tap at the Brewpub. Cloudy, glowing, pale gold with lace. Grainy, lightly lemony nose, some funk, yeasty. Sweet flavor of lemon-orange, some lactic acid and brett. Ok, but not quite convincing.

Keg at Cellarmaker, 28/01/16. Hazed yellow golden with a moderate off white cap. Nose is pissy citrics, brett, lemon rind, light wood, yeast esters, funky. Taste comprises lemon drizzle, farmyard, wood must, funk, damp straw. Medium bodied, fine carbonation, semi drying close with a light brett wash. Decent enough brett laden saison.

Draft - Funky citrus and vegetal notes. Cloudy gold. Sweet pineapple and citrus with a bright finish. Very juice like.

On tap at the brewery. Pours a hazy yellow gold with small white head that diminishes to nothing. The aroma is brett lemon funk. Medium mouth, brett, funky lemon, light dry finish, very good.

On tap at cellarmaker San Francisco. pours out a pale dishwater color with a ring of a head. Nose is lots of citrus lemongrass ginger and bread spice. Taste is more of the citrus notes and some bread sweetness.

Draught at Cellarmaker. Almost clear hay yellow liquid with minimal white head. Aroma of messmör, grain, mango, Brett and grain. Taste is dry and light bitter with notes of grain, lemon and light barnyard. Medium bodied with medium carbonation. Nice but weird.

The beer is a fairly pale tan yellow color. Little to no head. Just a few white bubbles. Completely clouded through. The aroma starts with a nice big vinous and tropical hop note. Lots of grapes with kiwi, mango, papaya. Nice stuff. Underlying stone fruit brett flavors. A little bit of dust. Some lemons. Light fresh grain. Taste is rather dry. Mild bitterness. Fair bit of hop flavor. The saison feels a bit watery underneath the hoppiness. Again, I think their brett needs more time to develop than they seem to give it. Still tasty enough and easy to drink. Refreshing. Light, a bit effervescent. Some body in there but finishes dry. Good stuff.
