Our humble interpretation of Lambic. We brew a wort identical to a lambs base beer containing malted barley, raw wheat and 3 year old Slovenian hops. After the 4 hour boil, we knock this out to our "cool ship" and then immediately add the wort to oak barrels with all the yeasts and bugs we could get our clean brewers hands on. 100% of the fermentation occurs in these barrels. This version of Colorambic came from one of our favorite barrels and is keg conditioned with Brettanomyces.

Bottle at What The Funk. Pours a hazy yellow gold with medium frothy white head that diminishes to nothing. The aroma is strong funk and rubber. Thin mouth, great funk, lemon, brett, cheese, light tartness, really impressive stuff, my favorite of the night.

Bottle. Cloudy yellow liquid with minimal white head. Aroma of lemon, funk, apple skin/red apples, light grain and wood. Taste is dry and medium sour with notes of lemon, apples and barnyard. Medium bodied with low to medium carbonation. Quite funky and balanced, really true to style (lambic that is). Impressing!

Bottle @ Crooked Stave WWBV pre-party and again at Avery/Boulder Sourfest 2013. Pours a cloudy yellow appearance with a white head. Wow! Very funky, lemony, lactic, cheesy (!), vanilla, barnyard aroma. More funk in the flavor along with some bread, must, vanilla, citrus, and cheese. Holy shit this is good. Troy is doing some really unbelievable things these days and this is exhibit A. FUCK YEAH!
