Im Reifekeller der Berg Brauerei in Ehingen-Berg sieht man Hefeweizen in offenen Bottichen gären – eine Braumethode von ganz großer Seltenheit – aufwendig und dadurch praktisch vergessen.

Der Gärschaum mit seinen Gerbstoffen und anschließend die Hefe werden mit dem großen Sieblöffel abgehoben. Die mit dem Sieblöffel abgehobene Hefe wird zur Vergärung des nächsten Suds der Würze zugegeben. Mit dieser Methode kommt der obergärige Charakter der Hefe zu seinem besonderen Ausdruck.

500 ml bottle. Cloudy pale yellow, foamy head. Sourdough, sparkling white wine, citrus, yeasty bready notes, unripe banana. Mild dry sourness. Medium to light bodied, oily texture, lively carbonated, dry sour finish. Nice, crisp and refreshing.

Bottle from Edeka in BaWü. Fruity bitter, easy to drink with an a bit too penetrant bitterness. Neutral grainy aftertaste, easy to drink. Moderate bitterness. Grainy neutral aftertaste.

Bottled, from Biershop Baden-Württemberg. Cloudy straw colour, mid sized creamy head. Aroma of cloves and mustard seeds. Dry with medium body and rounded mouthfeel. Husky malt, cloves and slight banana. Low bitterness. Refreshingly dry.

Cloudy, yellow colored, medium white good lasting head. Aroma is of wheat, cloves more than banana along with some citric notes. Taste is medium- sweet wheat, cloves, banana, light bubblegum in the finish, yeasty bready, some citric light+ notes. Medium to light bodied, average carbonation, bit thin.

Bottle. Cloudy pale yellow, fluffy white lace. Banana, clove, light leafy. Medium body, mellow mouthfeel, sparkly light. Ripe fruit in the finish, clove retronasal. Fresh fruity, interesting.

Bottle. Hazy pale yellow color with small head. Aroma is bananas, also some tartness and fresh yeast. Taste is overripe bananas, slightly phenolic, but overall still surprisingly fresh and light for the flavours that are in there. Not as silky mouthfeel as it could have. Not bad.
