My newest release is Revival Hard Apple and I couldn't be more thrilled to share it with you. I start with a secret blend of Washington-grown apples and add piloncillo, dark brown evaporated cane juice, purchased direct from Michoacan, Mexico. I ferment this dark base to all the way to dry using two exotic yeast strains: a beer yeast known for the round mouthfeel in Saisons and a rarely-used secret culture which produces aromas of pineapple, guava and peaches. This cider is brilliantly golden in color and deeply complex while remaining subtly familiar, with just the right amount of sweetness and acidity to be an everyday beverage.

Can shared at home. Deep clear golden pour, no head. Nose is medium sweet apples, a spicy touch. Taste is the same apple notes, perhaps a touch of cinnamon or the like. Short finish, average carbo. Dunno, average I guess?

Can from De Bierliefhebber. Sweetish apple aroma with a hint of funk. Flavour is sweetish with a little tartness, lightly dry. Medium body. Okay, but average Cider.

Can at Maakun’s. Clear golden with thin white head. Fresh dry apple juice, sweet caramel cane sugar sweetness, soft exotic tones of mango, melon. Moderate sweet and bitter, tart crispy edgy. Soft mouthfeel.

Can shared at home, still not 40 yet tasting... Clear bright golden with a tiny ring of white bubbles. Crisp apple, watermelon, dry apple peel, spicy yeast, soft spices, apple pie, sweet pear, soft vanilla. Nice and fruity. Medium sweet, light tart and very light bitter. Medium bodied. Quite tasty cider!

12 fl oz. can from Hawkes, London. Golden colour, white foam head that dissipates to a thin rim and aroma of fruity, floral, citric, apple, spiced. Taste is sweetish, some tartness, with baked apple, floral and fruity, with some spice notes. Medium bodied, medium carbonation, dry lightly spiced apple finish. Quite drinkable.

500ml bottle from Trader Joes, U-District, Seattle. Pours a clear burnished gold, aroma is lightly spiced, cassonade, demerrara, honey, real lemonade, ginger ale... some medium honeyed apple fruit.. an interesting blend for sure, fruity, herbal, spiced, floral, some elderflower, but not it tastes too much like a cider

$2.65 Can from Wine Warehouse. Medium gold pour, hard pour, no head, little carbonation visually present. Aroma is apple... nothing more. Flavor is slightly rotting apple... simple, kinda unappealing. Thin carbonation.
