A study in blending.
After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.
As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

750ml bottle. Pours a reddish-brown colour with a short-lived fizzy off-white foam head. Aroma of citrus rind, funk, woody oak, red wine. Taste is sour, citric, grains, fruity, berries, oaky, wood, red wine, tart, funky and tannic. Slick mouthfeel, medium bodied, fine carbonation, dry sour tannic finish. Very drinkable.

Small slightly bubbly mediumlasting head. Aroma is sour-ish dry, oak, mild vinegar, minerals, weeds, bark, thinner, sour berries. Taste is sour-ish fruity, mild vinegar, sour berries, oak, minerals, bark, grass, sorrel, butterscotch, spices. Medium bitterness, sour-ish dry mouthfeel. Nice one.

Bottle: Poured a deep cloudy murky brown color ale with a large foamy head with good retention and some lacing. Aroma of deep sweet malt notes with some vinous notes also perceptible. Taste is also a mix of sweet heavy malt notes with some oak and vinous notes. Body is full with limited filtration and good carbonation with no apparent alcohol. Not a typical Flanders red per say but an interesting mix nonetheless.

Bottle from the old De Molen Beershop, 2014 vintage, large sample. Slight hazy dark brown color, medium frothy head. Aroma of tart red fruit, oak wood, slight vanilla, bit red wine, some vanilla, some funkiness. Soft sour in taste, quite fruity, lots of wood and wine character. Like a Rodenbach on steroids. Quite complex, yet nicely balanced. Lovely stuff.

Bottle from Bacchanalia, Cambridge. Mid-brown with indigo and magenta hues. Gentle carbonation produces a small ring of khaki head. Cola nut, soy, blackberry, wood chips in the aroma. Not overwhelming, but just enough to entice. Sweet at first but quickly becomes sour throughout the mouth and in the throat. The body may be a tad thin but the carbonation more than makes up for it. It’s a good beer, maybe I expected more given the hype and the cost, but I can’t complain.

Fonefan 110415. Red brown colour with a beige head. Aroma is brett, sourness, malt, hop, oak. Flavour is dry, caramel, fruit, red wine, brett, sourness, malt, hop, oak, yeast. Nice beer.

Bottle @ Voldby Øl-messe. Pours hazy brown with a small offwhite head. Aroma is light sourness, light malty, some caramel, wet wood, tart fruit. Flavor is light sweet, light sour, caramel, wood, oak, some tart fruit, sour berries. Medium body, soft carbonation, light acidic finish. 290815

At Rich’s Massive Cellar Emptying Tasting, courtesy of Pierre. Beyond modus 2014 8% yeasty Apple sauce & oak aroma. A brownish red pour that has a tart acidic berry flavor with a woodsy sour oakiness. Very good.

Bottle shared. Pours cloudy reddish brown with a tan head. Aroma has big vinous notes upfront, barrel oak, tart overripe dark fruits, slight red fruits, caramel and light funk. Flavour is over moderate sweet and sour. Medium bodied wit soft carbonation.
