After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.
As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Bottle shared thanks to Kermis. Murky reddish brown with short lasting beige head. Red wine, sour red fruits, over ripe stone fruits, old wood, but lactic, very funky, hay, light metal, quite some spices too. Light sweet and medium sour. Medium bodied with a bit sticky feel. Very nice, close to Rodenbach vintage, but more wine notes.

Bottle @ Drink Rich’s American beer, thanks to Pierre T. Brune légèrement foncée, pas de col. Arôme fruité rouge, rétro lactose et brett ponctué par un bouquet modéré de malt. Palais offre un beau profil de vin rouge, fruité noir, note aigrelette assez prononcée, le tout fonctionnant bien avec un alcool plus élevé et dont le malt vient un peu balancé le tout. Le fait d’ajout de levure sauvage enlève un peu du côté, et du charme, attendu d’un style plus proche d’une veille brune..

Pretty cloudy rusty brown beer, irregular off-white head, pretty stable, bit adhesive. Aroma: very fruity, chlorine, funky, weird. MF: soft carbon, meidum body. Taste: very sour, some vinegar, funky, bitter tannings. Aftertaste: sourish, tannins, funky.

100 ml sample at a tasting. Clear red. Sour, acetic too, glue, nail polish remover and you god know what other chemicals. Apart from that, subtle maltiness and some hop bitterness too. Complex, but harsh.

Bottle 750ml. [ As Wild Beer Beyond Modus ].Clear medium to dark amber color with a small to average, frothy, good to fair lacing, mostly to fully diminishing, off-white head. Aroma is moderate malty, wood, tart fruit, grapes, tart berry. Flavor is moderate to heavy sweet and light to moderate acidic with a long duration, tart, fruity, wood, dry.
