A study in blending.
After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.
As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Bottle @ Post-Easter Procrastination, Ulfborg. Pours hazy reddish brown with airy off-white head. Clear, vinous aroma, with touches of malt and hints of hops. Vinous flavour with darkish, malty touches and hints of yeast. Acetic aftertaste. Nice.

Bottle. Hop Hideout, Sheffield. Just about clear, reddy amber. Halo of sticky, light tan head. Unripe hedgerow fruits. Cider lollies from the ice cream van. Some salt. Some savoury. Big tang. Sweetness on the lips. Big pucker. So complex, I could just ramble for ages. Beautifully balanced between two extremes. Fresh, tart, sweet, tasty, and easy drinking. Lovely beer.

On tap at Craft Covent Garden. Deep red brown russet colour. Lasting cream head. Kinda a flemish red aroma. Kinda like a flemish red in the mouth. Touch of melted butter. It’s ok but again way too cold. And it’s like the real thing but isn’t the real thing. Decent stab at the style though. Some salt n vinegar crisp sourness on the finish.

Bottle shared by Joes @ Van Moll Brewpub. Hazy red-brown color, average sized off-white head. Aroma is malts, sourish, sour dough. Tastes about the same: malts, sourish, sour cherries quite profoundly with a sour-bitter finish. Medium body, decent carbonation. Not my thing but quite reasonable.

Bottle split at CBC Clerko, thanks to Lorna, 06/01/15. Rich chestnut brown with reddish hues and a decent beige covering. Nose is tarte cherry, woody strokes, light smoke, spice, tangy red berry, nutty. Taste comprises bitter red berries, funk, acidic notes, tarte cherry skins, must, dank straw. Medium bodied, fine carbonation, semi drying close. Decent Flemish red.

Tasting at Craft Clerkenwell. Thanks to Lorna, Lilghtly hazy red - amber beer, small cream colour head. Light palate, semi dry, mild fine carbonation. Slightly acidic vinegar start, the harsher end of Flemish reds. Nice red wine tang on the back end. Whisper of floral fruits. Finishes light and a little puckery. Mild acidic burn as it goes down. A tasty number but a little acidic.

750ml Bottle - Dark brown with red tinges. Vinous aroma with notes of raisins, cherries, oak and marzipan. Fruity, rich and vinous taste with fruitcake, mince pies, oak and some sharp notes in the finish.

Bottle shared at craft clerko. Many thanks to Lorna Caramel brown coloured pour with a lasting loose tan head. Aroma is composed of caramel, jammy, plastic, little solvent, tart fruit, interesting. Flavour is interesting orange, vanilla, caramel, solvent, little marzipan. Tart raspberry. Quite interesting. Palate is semi tart, moderate to low carbonation. Lingering caramel and tart apricot.

Bottle shared in London - many thanks to Lorna. Pours cloudy red-brown with a frothy tan head. The aroma holds moist leather, ripe berries, earth, a bit of toasted cereal. Medium sweet flavor with some bready malts, mild caramel and butterscotch, tangy berries, cherry, prune, salt. Medium bodied with fine carbonation. Lightly oily on the finish with further ripe, tangy fruits, bread, toffee, mild alcohol warmth, slight woods bitterness. Very drinkable and nicely dynamic.

Bottle thanks to Lorna. It pours deep ruby-red with a medium beige head. The nose rich, woody, vanilla, toasty coconut, jammy, red fruits, vinous, must, marshmallow, cherry and raspberry. The taste is smooth, sour, woody, some acidity, plenty of red fruit, red grape, jammy berry, sherbet, raspberry pip, earth and red wine with a smooth, fruity finish. Med+ body and fine carbonation. Good depth of flavour. Well rounded and quaffable. Tasty.
