A study in blending.
After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.
As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

750ml bottle from Cornelius, shared with jeevan as a late Hogmanay treat. Pours hazy red-brown, thin but long-lasting white head. Aromas of funk and fruit, wine and oak. Taste is more red wine, light balsamic sourness, tart finish. Medium body, creamy to thin texture. Sour zingy finish. Nice.

Keg at the hanging bat... Deep brown.. Thin tan lacing... Sharp tart fruits.. Very rodenbach nose.. Tart fruits sour.. Soft milky like funk.. Light tart... Big soft fruits.. Light balsamic.. Soft cherry... Ok but not me... Keg at the hanging bat.. Deep brown.. Dark raisins.. Very rodenbach nose... Sofy sweet.. Big red wine .. Big Green raisin.. Soft fruits... Big Cherry fruit 3.6

Keg at the Hanging Bat. Pours deep reddish brown, nose is funky, toffee, vanilla, berries, taste is similar, quite tart.
