On tap at The Castle, pours a hazy golden orange with a small white head. Aroma brings out tangy citrus, lacto, and some wheaty notes. Flavour is fairly tart, with biscuity malt, gentle tart citrus, and lacto. Not a whole lot of depth, but the drinkability is high. Pleasant.

Berliner Weisse the old way - it has been brewed according to various methods in its six centuries of existence - by the Berliner Weisse specialist 'par excellence', situated in Berlin. Tasted from tap at Dok Brewing Festival. Creamy, snow white, stable, papery lacing head, hazy straw blonde robe with greenish tinge. Aroma of lemon curd and lime butter, kefir, damp hay, yoghurt, chalk, raw cucumber, fermenting plum touch. Crisp, lime-like onset with sharper lemony sour edges but in all remaining very palpable and nowhere becoming too puckering, yoghurty lactic tartness throughout with gently drying effect, bready and soapy-wheaty basis, creamy and smooth with the intended Brett effect coming in near the end, a bit sweaty and old moldy lemon-like and adding an extra layer of complexity I usually do not find in Berliner Weisse; nice lemon butter effect too. This is as classic and stylish as it gets for a Berliner Weisse and arguably among the best ones I ever had - a true 'champagne of the north', as Napoleon's troops allegedly called the style a long time ago...
