Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

On keg at Six Degrees North, Edinburgh. Appearance - blonde with attractive lacing. Nose - subtle strawberry with white pepper. Lemon cream. Taste - more lemon cream and spice with the strawberry coming through at the end. Palate - close to medium bodied with a creamy texture. A long creamy yet tangy finish. So elegant. Overall - delicious.

Clear blond colour with heavy carbonation. Aroma has plenty of wild funky yeast. Also lots of candied strawberry. Decent body. The honey sweetness does come through. Dry and yrasty to the finish.

Bottle. Golden pour. Aroma of tart, brett, horseblanket, cherry and funk. Taste has rich funk, horseblanket, tart, citrus, cherry, dry hay, oak and a funky tart finish. Very good.

Bottle @ Tidens Farver. Pours light golden with a small offwhite head. Aroma of malt, light sourness, yeast, tart berries, strawberry, starberry candy, wood, white wine. Flavor is sweet and light sour, malt, yeast, strawberry, grapes, wood, white wine. Medium body, average carbonation, dry and light acidic finish. 291218

Aromas are Brett, fruit, yeast and soap. Fruit comes out more in the flavor and is a little more tart than sweet. Brett is still obvious but not overwhelming. Great body slightly boozy finish.

On tap at Goose Island Shoreditch. Fruity sour. It's expensive but very decent. Some light red fruit I thought. Some lemon on the finish. An above average sour. Very likeable. Some decent bicuit malt. Good.

2017 bottle. Gold with a white head that just about holds a coat in the requested chalice. Mild funk, honeyed dough, nectarines - sits nicely between bright and brooding. Medium bodied, spritzy. Sweet with floral honey, a little tart, zingy. Off dry finish with some spices that really creep up after a while. Old oranges, just ripe nectarines with a brackeny touch. Dangerously easy drinking for 8.9%. Washed rind cheese friendly. Good - just a little drier would have worked even better.

Bottle: Poured a hazy yellow color ale with a medium size white head with limited retention and no lacing. Aroma of tart and acidic notes with some light fruity notes. Taste is also a mix of tart and acidic notes with light vinous feel with some subtle fruity undertones. Body is somewhat fuller than average with good carbonation. Enjoyable but unfortunately acidic notes are overwhelming and limits the flavours profile.
