Berliners have enjoyed drinking their “Weisse” since the 16th century. When the Huguenots arrived on the Spree shortly thereafter, a new term coined for the taverns throughout the city - Budike (from Boutique).
Up until the early 19th century, the innkeeper, known as Budiker, usually served the Berliner Weisse, a light beer made from wheat and barley malt, to which a top secret cocktail made from wild yeasts gave it its sweet and sour taste.
The "sparkling wine of the north", as Napoleon's troops admiringly called the beer, became the favorite drink of the whole city.

Flaska från SB. Disig/grumlig gyllengul vätska nästan utan skum. Syrlig doft med mycket citrus. Pigg och syrlig. Mest citrussyrlig men också lite laktosyrlig. Riktigt syrlig för stilen. Lätt sälta, vete, stenfrukt. Kanske väl syrlig och fruktig. Ok

Bottle 33 cl. Pours a cloudy, pale yellow with a rich, white head. Very lactic nose - is there some Brett as well? Light body, an initial fruity sweetness before a light tartness takes over. No real hops to be detected. I usually don't like straight Berliners much, but this is actually very accessible and refreshing. 090922

Flaska. Syrlig, mycket citrus, stor sötma (klassiska pudersockret), lite torr alldeles på slutet. Uppfriskande.

Gushing to towering, dense, light yellowish head, gone in seconds over lemonjuice-like beer. Spicy nose, lactic acid, faint hint of coriander, lots of citrus, lime, but also lindenblossom. Very lemony/lime in flavour; bit peppery, kafir lime. Hints at fruitsugars, Traubenzucker. Lactic acid, Light body, tart, dry-out effect. Medium carbonation, refreshing. Ultra tart, likeable Berliner Weisse from the heart of Berlin, or...? Thanks to Joren!

330ml bottle from beer52 (3.5% ABV): BB 10th Dep 2022. It's 08:00 on Saturday morning, 27th Mar 2021 and I am about to open it. I don't usually drink this early but I've been up a while and it's a beautiful sunny, spring morning here in Shropshire and I've been dreaming of Berlin! Right, it's being poured into an old Schulteiss Berliner Weisse bowl and is a pale yellow colour, fast fading white head on the cloud brew. Lemon like aroma, the taste a sour lemon sherbet flavour. Nice!
