So for designing my table beer I had to balance all my imbibing desires into a product that would always quench my thirst. I compiled some of my favorite attributes into a format that would be pleasing on any day or time. Low abv, dry finish with a light funky yeast esters that are accented with a abundance of earthy & fruity hops. Balance is always the goal, but for this I also wanted extreme quaff-ability, refreshment, and subtle complexity.. Classic? perhaps. www.tablebeer.com

650 mL bottle from Amity Wines, New Haven. Pours a hazy orange color with a large foamy white head. Decent head retention. Aroma of stone fruits, brett, yeast, spice. The taste is dry, earthy and funky. Plenty of brett and a spicy finish. Medium bodied and quite drinkable. Nice beer.

Bottle from John’s Grocery. Pours pale golden color with fluffy white head. Strong brett aroma with some fruitiness and doughiness. Light funkiness and tartness with brett flavors. Light body with lively carbonation and a dry finish.

22 oz bottle purchased at Royal in Kansas City, Missouri. The pour is clear golden, with effervescent carbonation bubbkes and a three inch fluffy egg white head. The head is slow to fall, eventually leaves behind a sheet of lace. The aroma is dry cracker malt, nice zesty lime citrus and a nice touch of leathery earthy Brett yeast. There is a spruce element too that adds nicely to the overall fresh and clean character of the nose. The taste is graint, earthy, hay, then moves to the citrus notes, pine needles, and finishes bone dry with the leathery Brett. As it warms, the pine and Brett really take over, giving a nice bite and dryness. The palate is light bodied, soft natural carbonation, and the great dry finish. Super drinkable, each sip begs for the next. I really enjoyed this beer.

Bottle ($11.49). Gusher. Pours with a murky yet very pale golden hued body with a large, rocky white head that has great staying power. Good lace as well. Aromas are estery, pineapple, rusting, lots of earthy and peppery phenolics. Brett, earthy, herbal hop notes. Buckwheat, black pepper, dried fruits. Low nutty notes. Flavors are dry, lightly tart. Bitterness is a bit sharp at first, and a touch astringent. Herbal. Some fruit esters up front (under ripe pineapple). Medium phenolic. Juicy. Unripe stone fruit. Low grainy notes. Bitterness lingers. Dry and slightly bitter balance overall. Very lively bubbles, bone dry, lighter bodied. Very nice, but way to expensive to make a habit of.

Herb-bitterer Beginn mit deutlichen Kräuternoten, wenig süß. Im Mittelteil bitterer werdend, womit auch eine gewisse Trockenheit einhergeht, die in diesem Fall aber kaum stört. Schwieriger aber erfrischender Abgang. 9/10/8/11//11

Tap at Of Love & Regret - quasi- Orval clone here - fuck yea - hazy gold, with a huge, frothy, Orval-esque head - soooo dry and flinty, with some lovely, moderately funky phenolics that play off of the dry qualities and peppery bitterness/flavor of the hops extremely well - light in abv, but with full, soft carbonation and a fullness to the body that you do not normally find in a brew like this - awesome beer.

Draft. A light golden beer with a lazing white head. The aroma has notes of hops, flowers, and drying hay. The flavor is sweet with notes of malt, flowers, and hay. The body is light.

Draught @ [ Copenhagen Beer Celebration 2012 ] @ Spartas Lokaler, Faelledparken in Osterbro, Copenhagen, Denmark.Clear medium yellow colour with a average, frothy, good lacing, mostly diminishing, white head. Aroma is moderate malty, toasted. pale malt, moderate to heavy yeasty, leather, saison, fruity, peper notes. Flavour is moderate to light heavy sweet and light moderate bitter with a average to long duration, dry. Body is medium, texture is oily, carbonation is soft. [20120511]

Bottle @ Scott’s Summer Saison tasting. Thanks so much Scott! Milky/cloudy yellow appearance with a small white head. Spicy onion/veggie, lemon spritzy, a bit bready aroma. Tangy, veggie, bitter herbal hoppy, fairly dry, light fruity flavor.
