“Green Walnut” is a surprising and innovative Lambic beer of Oud Beersel. For the production of the Green Walnut real fruit is used, in the same way as for the Oude Kriek of Oud Beersel.
In July the still green walnuts are gathered in the Oud Beersel orchard and are added to the Lambic beer that matured in wooden wine barrels.
After the bottle fermentation this sparkling walnut Lambic of Oud Beersel is called Green Walnut, which is a strong companion for blue-veined cheese, dried ham and salads with nuts.
The green walnuts macerate in the Lambic beer enabling them to unfold their taste and flavour. The initial bitterness which is extracted from the walnuts is tempered during the ripening of the walnut Lambic. This results in a delicate balance between the light sourness of the Lambic beer and the bitterness of the green walnuts. The wooden wine barrels provide a subtle touch of red fruits to the beer.

Poured from a bottle into a tumbler at Grote Dorst. Aroma has a light sweetness with a bit of an herbal character. Some medium light green walnut notes, especially the hull with a bit of a woodsy, herbal character. A light candi sugar note. Light herbal, earthiness. Light lemon. Pours a hazy, dark gold with a slight greenish hue with light lacing and a small film that lingers. Flavor is slightly sweet with a medium light acidity with some light lemon. Some light green walnut hull notes with a touch of a nuttiness. A touch of green apple. Some light oak notes. Hints of earthy, woody funk with a touch of straw. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, while I liked the green walnut character I feel like the beer was still a bit too sweet. The beer lacked complexity as well without much yeast/bacterial character. Acidity was also a bit one dimensional.

At Nacht van de Grote Dorst 2016 as "Walnoten Lambik". Hazy golden color with hardly any head. Aroma is nutty, bitter, with nice citric lambic funk. Taste is nutty, citric funk, metallic towards the end. Alright.
