Beyond Good and Evil is one of Nietzsche’s most powerful works, challenging convention, ‘wisdom’ and ‘morality;’ urging us to transcend the restrictive, bounded concepts of good and evil; and confronting the relative nature of ‘knowledge.’ This both informs and inspires our work. Beyond Good and Evil is also the name of our bourbon barrel-aged maple imperial stout. Brewed in December of 2016, we crafted this beer with malted wheat and Vermont maple syrup. It then rested contentedly in hand-selected bourbon barrels from one of our favorite distilleries for nearly two years.

Bottle thanks to Leighton. It pours opaque black with a small tan head. The nose toasty, earthy, dark chocolate, fudge, toasty brown sugar and dirt. The taste is rich, bitter-sweet, earth, booze, dark fruits, jammy fruity, cocoa, plum and candy with a short, sweet finish. Fullish body and fine carbonation. Oily, but fine.

Bottle shared in London - picked up at the brewery. Pours black-brown with a creamy beige head. The aroma holds burnt wood, toasted toffee, light vanilla, dark bread. Medium to big sweet with rich chocolate, dark fruits, raisins, ripe and dried cherries, dark bread, figs. Medium to full bodied with fine to average carbonation. Warming finish with gooey dark malts, more ripe dark fruits, raisins and figs, some sugary chocolate. Big stuff, lots of sweet dark malts, only minimal maple character. Still, damn tasty.

Bottle thanks to Will. Pours a motor oil black and medium creamy tan head that lasts. The aroma is a strong maple, bourbon, oak, roast. Slick mouthfeel with sweet roast, dark chocolate, light oak. Easy to drink, very impressive.

Poured from a 375 mL bottle. Aroma is slightly sweet with some roast and chocolate notes. Light maple syrup character with medium light bourbon. Some faint oak and vanilla. Light tobacco and leather character with hints of dark fruit. Pours black with a small, fairly thick dark mocha head that steadily recedes to the edges where it lingers. Light lacing an moderately long legs. Flavor is fairly sweet with a medium light maple syrup note. Moderate chocolate notes with some medium light roast. Some dark fruit character, mostly plums and prunes but also cherry. Faint tobacco and leather. Medium bitterness. Medium light bourbon notes with faint oak and vanilla. Light alcohol spice. Mouthfeel is full bodied with medium low carbonation. Low astringency and medium low alcohol warmth. Overall, another great stout from Hill Farmstead. Lots of sweetness with some nice maple syrup and chocolate notes. Aroma has nice roast and black malt complexity. Good bourbon notes that compliment rather than overwhelm.

Bottle shared by AJ - thanks! Pours opaque black with a medium brown head that dissipates fairly slowly with nice lacing. Aroma if maple, roasted malts, chocolate, a bit of bourbon, but not a lot. Flavor is medium plus sweet, light bitter, lots of chocolate and maple, amazingly subdued barrel notes given the time spent in one. Medium plus body, creamy mouthfeel. Pretty nice.

Flavor is rich. Pure velvet texture with easy maple notes and sweet chocolate. Hints of vanilla with a light bourbon nuance. Oily texture and slick.
The Complex flavors are so smooth and deep. The ABV is no longer listed on HFS brews but whatever the ABV is, it’s not detected. Insanely good.

Bottle picked up last week. Just couldn’t wait to enjoy this beer!
A - Poured a pitch black oily chocolate texture, 2 finger chocolate head fades to a small thin line. This beer coats the glass so very well!
S - Nose is loaded. Licorice, chocolate, maple syrup, rice krispy treats and sweet candies.
T - Wowzerz. This is a heavy, thick, chocolate explosion. A touch of some fruity qualities like cherry or raspberry. Heavy creamy chocolate. No coffee or espresso at all. The maple is not at all overwhelming. The thole thing just melds together.
M - Velvety smooth mouthfeel, sweet and tongue coating oil.
O - Wheat imperial stouts are where it’s at.
